O dia da matanza todos os que axudaban na matanza comian e ceaban na casa onde se mataba o porco, era unha festa na que participaban toda a familia e veciños.O día seguinte tállase o porco e sepáranse as carnes de sangue para facer os chourizos de cebola e as carnes máis limpas para facer os chourizos de carne. Tamén se lava e se salga, esfragándoo con cebola ou viño branco para que o sal teña humidade e penetre mellor. Logo déixase na maseira. Os días para a salgadura van en razón dos quilos de carne (un quilo por día).Consérvase a cachucha, os ósos da soá ou espiñazo, os lacóns, os xamóns, , o corazón e o rabo. Ó xamón hai que lle escoar ben o sangue antes de salgalo para que no
n se estrague. Unha vez lavado e salgado ponse uns días a afumar e despois cólgase.Con posterioridade preparan a zorza, carne picada e adobada coa que se farán os chourizos. Durante os dous dias posteriores dáselle voltas ó adobo para ver como vai. Esa mesma tarde coa zorza e a cebola cocida o día anterior énchense os chourizos de cebola e o dia seguinte os de carne.
Unha vez enchidos os chourizos atanse e poñense a afumar, Asi remata a faena da matanza.
